Ingredients

  1. 1. 1 1/2 cups cashews
  2. 2. 1/4 cup chickpea flour
  3. 3. 2 tsp baking powder
  4. 4. 1 tsp cinnamon
  5. 5. 1/4 tsp nutmeg
  6. 6. 1/4 tsp sea salt
  7. 7. 1/2 cup cooked sweet potato puree
  8. 8. 1/4 cup maple syrup
  9. 9. 1/4 cup coconut oil (measure after melting)
  10. 10. 2 flax eggs (real eggs should work too)
  11. 11. 1/2 cup chocolate chips

Steps

  1. 1

    Preheat oven to 180

  2. 2

    In a food processor, grind the cashews into a powder. Add them to a bowl with the rest of the dry ingredients.

  3. 3

    In another bowl, mix the wet ingredients.

  4. 4

    Add dry to wet and mix until combined.

  5. 5

    Stir in the chocolate chips.

  6. 6

    Shape mixture small balls and place on into a parchment lined pan.

  7. 7

    Bake for 30 minutes

  8. 8

    Once cool, cut into pieces. You can serve immediately, or refrigerate for later
