This coffee jelly has a deliciously smooth and bouncy texture thanks to agar! It's slightly bitter and not too sweet. Enjoy it with simple syrup if you like.

In a saucepan, combine the sugar and agar powder. Mix well.

Once mixed, add the water and heat over medium heat until it comes to a boil. Once boiling, reduce to low and simmer for 1 minute.

Remove from heat and add the instant coffee. Stir until completely dissolved. Strain the mixture, pour into molds, and chill in the refrigerator until set.

Serve with milk or simple syrup if desired.
