Ingredients

Serves 2–3 servings
  1. 6.3 oz (180 g)thinly sliced pork (for shabu-shabu)
  2. scant 1 teaspoon flour (for pork)
  3. Plenty of water (for blanching pork)
  4. 1–2 tablespoons sake
  5. As needed, your choice of vegetables
  6. As needed, your favorite dressing or sauce

Cooking Instructions

    Vegetables used:
    1. Lettuce: 2 leaves
    2. Sweet onion: 1/4
    3. Cucumber: 1/3
    4. Radish sprouts: 1/3 bunch
    5. Cherry tomatoes: 4

    Thinly slice the onion. Cut the cucumber in half lengthwise, then slice thinly on the diagonal. Cut the cherry tomatoes into 2–4 pieces. Tear the lettuce into bite-sized pieces by hand.

    Lightly dust the pork with flour using a tea strainer.

    Note: Only a light dusting of flour is needed on the pork. Too much will make it soggy!

    Bring plenty of water to a boil for cooking the pork. Once boiling, add 1–2 tablespoons of sake and let it come back to a boil. Reduce the heat to medium-low.

    Add the floured pork slices and gently separate them with chopsticks. After that, do not stir. Cook over medium-low heat until it just comes back to a simmer (do not let it boil vigorously).

    Once the pork is cooked through (it should be just slightly pink), drain in a colander and let cool. Do not rinse the pork with water!

    Arrange the vegetables and pork on a plate. Serve with your favorite dressing or ponzu sauce.
