Cooking Instructions

Place the beans in a heavy pot and pour in plenty of water. Soak until the beans lose their wrinkles and become plump. This time, I soaked them for a day and a half.

Put the pot on medium heat, and once it boils, reduce to low heat and simmer for 30 minutes. Let it cool, then drain the beans in a colander and rinse them. The pot will be dirty, so wash it as well.

Put the beans back in the pot, pour in plenty of water, and repeat step 2.

Taste the beans, and if they are still hard, heat them again until they are soft enough. Cook until they are almost falling apart.

Discard the bean cooking liquid until it is about halfway up the beans. Add half of the sugar (250g), simmer on low heat for 30 minutes, and let it cool.

Once cooled, add the remaining sugar, simmer again on low heat for 30 minutes, add salt, and let it cool. Let it sit overnight to allow the flavors to meld.

White beans can be cooked in the same way.

Kidney beans can also be cooked similarly.
