Peel the potatoes, slice them into 1/4-inch pieces, and boil them.

Finely chop the onion and shiitake mushrooms.

In a frying pan, cook the ground meat. Once it starts to change color, add the onion and mushrooms, season with a pinch of salt, and cook on low heat for about 5 minutes.

Add the potatoes and gently break them up while mixing. Add the soy sauce, sugar, and mirin, and cook until the liquid evaporates.

In a large bowl, beat the eggs and add the cooked mixture. Add some vegetable oil to the frying pan and pour in the egg mixture. Stir gently with chopsticks while cooking.

Once the bottom sets, cover with a lid and cook on low heat for 4-5 minutes. Flip and cook for another 1-2 minutes.
