Ingredients: 10 1/2 oz ground pork (300g); 20 –30 shumai wrappers; 1/2 onion; 2 -inch piece green onion; 3 tablespoons potato starch (about 24g); 1 1/2 tablespoons Shaoxing wine (or sake); 1/2 tablespoon raw cane sugar; 2 teaspoons sesame oil; 1 teaspoon scallion oil; 2/3 teaspoon granulated scallop soup base; 2/3 teaspoon soy sauce; 1/2 teaspoon oyster sauce; 1/4 teaspoon salt; 1 little grated ginger or ginger paste; 1 pinch black pepper

Ingredients

Makes 25–30 pieces

10 1/2 ozground pork (300g)
20–30 shumai wrappers
1/2onion
2-inch piece green onion
3 tablespoonspotato starch (about 24g)
1 1/2 tablespoonsShaoxing wine (or sake)
1/2 tablespoonraw cane sugar
2 teaspoonssesame oil
1 teaspoonscallion oil
2/3 teaspoongranulated scallop soup base
2/3 teaspoonsoy sauce
1/2 teaspoonoyster sauce
1/4 teaspoonsalt
1little grated ginger or ginger paste
1 pinchblack pepper

Steps

Finely chop the onion and green onion, then toss with the potato starch.

Place the ground pork in a bowl. Add all the ● seasonings and mix well until sticky.

Add the onion mixture from step 1 to the pork and mix together.

Wrap the filling in shumai wrappers. (See tips and notes for wrapping.)

Flatten the bottoms of the dumplings.

Place in a steamer with boiling water and steam over high heat for 8 minutes.

They're ready to serve!
