Ingredients

Makes 25–30 pieces
  1. 10 1/2 ozground pork (300g)
  2. 20–30 shumai wrappers
  3. 1/2onion
  4. 2-inch piece green onion
  5. 3 tablespoonspotato starch (about 24g)
  6. 1 1/2 tablespoonsShaoxing wine (or sake)
  7. 1/2 tablespoonraw cane sugar
  8. 2 teaspoonssesame oil
  9. 1 teaspoonscallion oil
  10. 2/3 teaspoongranulated scallop soup base
  11. 2/3 teaspoonsoy sauce
  12. 1/2 teaspoonoyster sauce
  13. 1/4 teaspoonsalt
  14. 1little grated ginger or ginger paste
  15. 1 pinchblack pepper

Cooking Instructions

  1. 1

    Finely chop the onion and green onion, then toss with the potato starch.

  2. 2

    Place the ground pork in a bowl. Add all the ● seasonings and mix well until sticky.

  3. 3

    Add the onion mixture from step 1 to the pork and mix together.

  4. 4

    Wrap the filling in shumai wrappers. (See tips and notes for wrapping.)

  5. 5

    Flatten the bottoms of the dumplings.

  6. 6

    Place in a steamer with boiling water and steam over high heat for 8 minutes.

    They're ready to serve!
