Ingredients

Makes about five 4-inch by 4-inch (10cm x 10cm) cutlets.
  • 1 blockfirm tofu
  • About 3.5 oz (100g) okara (soybean pulp)
  • 1whole cleaned squid
  • (Or 1 bag seafood mix) (Seafood mix also works well)
  • 1/2onion, finely chopped
  • 1/2carrot, finely chopped
  • as neededMayonnaise (reduced fat),
  • About 1 1/2 tablespoons chicken bouillon powder
  • Salt and pepper, to taste
  • as neededPanko breadcrumbs,
  • as neededOil for frying,

Steps

  1. 1

    Drain the tofu to remove excess water.

  2. 2

    Finely chop the onion and carrot, and place them in a bowl.

  3. 3

    Add the drained tofu and squid to a food processor and blend until smooth.

  4. 4

    Add the mixture from step 3 and the okara to the bowl from step 2. Mix well, then season with chicken bouillon powder, salt, and pepper.

  5. 5

    Shape the mixture into squares, spread mayonnaise around the outside, and coat with panko breadcrumbs.

  6. 6

    Pan-fry the cutlets in enough oil to cover them halfway, until golden and crispy.

  7. 7

    Serve with lemon, sauce, or a mix of mayonnaise and ketchup if you like.
