Ingredients

2 servings
  1. 3.5 oz (100 g)ground pork
  2. 1/2 tablespoon (7 ml)toasted sesame oil
  3. About 1/2 inch (1 cm) grated ginger (from a tube or fresh)
  4. About 1/2 inch (1 cm) grated garlic (from a tube or fresh)
  5. 3 tablespoons (45 ml)miso (add an extra 1/2 tablespoon for a stronger flavor)
  6. 1 teaspoon (5 ml)doubanjiang (chili bean paste)
  7. About 4 inches (10 cm) white part of a leek
  8. 3 cups (700 ml)water
  9. 1 tablespoon (15 ml)chicken bouillon powder (or granules)
  10. 1 tablespoon (15 ml)concentrated noodle soup base (mentsuyu, 3x strength)
  11. 1/2 teaspoon (2.5 ml)salt
  12. 2 teaspoons (10 ml)sugar
  13. 1/2 teaspoon (2.5 ml)chili oil (optional)
  14. Ground pepper and sesame seeds, to taste
  15. Butter, as desired
  16. 2servings fresh ramen noodles

Cooking Instructions

    Slice the leek lengthwise, then cut into thick pieces as shown in the photo.

    Add all ingredients marked with ○ (ground pork, sesame oil, ginger, garlic, miso, doubanjiang, leek) to a pot. Sauté until the pork is cooked through.

    Sautéing brings out a savory aroma and depth to the soup.

    This is what it should look like after sautéing.

    Add the water and all ingredients marked with ● (chicken bouillon, mentsuyu, salt, sugar, chili oil, pepper, sesame seeds) to the pot. Bring to a boil, then simmer for about 5 minutes. Your restaurant-style miso ramen soup is ready!

    Serve with ramen noodles and your favorite toppings.

    Don’t forget the butter! It’s a must—add a pat of butter on top for extra richness.
