When my family made katsudon at home, my mom would use store-bought pork cutlets.

Place the sliced onion in a pot, add enough water to just cover, and bring to a boil.

Once boiling, reduce to medium heat and add the soy sauce, sugar, and bonito soup stock powder. Adjust the seasonings to taste.

Cut the pork cutlet into bite-sized pieces.

Add the cutlet to the pot and simmer until the broth reaches your desired amount.

Pour the beaten egg evenly over the top, cover the pot, and let it steam for a short time.

When the egg is cooked to your liking, turn off the heat.

Spoon cooked rice into a bowl, pour the contents of the pot over the rice, and top with green onion and nori if you like.
