You can make a restaurant-quality spicy Dan Dan soup right at home! It’s also delicious if you swap the udon for somen or Chinese noodles.

You can make a restaurant-quality spicy Dan Dan soup right at home! It’s also delicious if you swap the udon for somen or Chinese noodles.

Cooking Instructions

Finely chop the onion (or green onion).

Cut the bok choy into quarters lengthwise. Boil until just tender, then drain.

Heat the sesame oil in a frying pan. Add the ground pork, chopped onion (or green onion), gochujang, grated garlic, and grated ginger. Sauté until cooked through.

In a separate pot, add all the soup ingredients marked with ★. Heat and stir well.

Once warmed, add the soy milk and continue heating.

Just before it comes to a boil, add the udon noodles and cook according to the package instructions.

Serve the noodles and soup in bowls. Top with the bok choy, pork mixture, and drizzle with chili oil (and Sichuan peppercorn oil or coarsely ground black pepper, if desired). Enjoy!
