Ham and Egg Sandwich for Lunch or Bento

I've been making this sandwich since I was in high school. It was featured in a recipe book and has received lots of wonderful feedback and creative variations—thank you so much!

Crack the eggs into a bowl, add a pinch of salt, and beat well.

Lightly oil a frying pan and pour in the eggs to make a large, thin omelet. Place the cheese in the center and sprinkle black pepper over the top.

Fold both sides of the omelet toward the center to match the size of the cheese, then place the ham in the middle.

Fold the ham as well. It’s easier to fold if you make a light cut with a spatula.

Shape into a rectangle.

Flip and cook the other side well, then transfer to a plate.

Toast the bread. Spread mayonnaise and black pepper on one slice, and butter and ketchup on the other.

Layer lettuce and then the omelet on top of the mayonnaise slice, then top with the ketchup slice to make a sandwich.

Insert toothpicks and cut the sandwich to keep it from falling apart. Enjoy!

If packing for a bento, let the omelet cool before assembling the sandwich.
