Cooking Instructions
- 1
Finely chop the garlic and dried red chili peppers.
- 2
Heat sesame oil in a frying pan over low heat. Add the garlic and chili peppers and cook until fragrant.
- 3
Add the ground pork, season lightly with salt and pepper, and cook, breaking it up as it browns. (Let it sear before stirring for best flavor.)
- 4
Push the pork to the side and add the doubanjiang. Sauté it in the pan to bring out its spiciness.
- 5
Add Shaoxing wine, oyster sauce, and gochujang. Mix well, then sprinkle with Sichuan pepper if using.
- 6
For extra heat, adjust the spiciness with chili oil or ground chili pepper to your liking.
- 7
Cook off any excess liquid. The Taiwanese-style ground pork is ready.
- 8
In a pot, bring the water to a boil. Add the soup seasonings to make the ramen broth. (You can also use store-bought soy sauce ramen soup.)
- 9
Place the cooked noodles in a bowl. (Medium-thin straight noodles are recommended. Be careful not to overcook.)
- 10
Top the noodles with garlic chives cut into 2-inch (5cm) pieces. (They can be added raw since the hot soup will cook them slightly.)
- 11
Generously add the Taiwanese-style ground pork on top.
- 12
Pour the hot ramen soup over everything.
- 13
Drizzle with chili oil to taste.

I love Taiwanese ramen noodles. My husband and I used to go to Taiwanese ramen restaurants before our son was born, but it's hard to take our baby out to restaurants. Finally I tried to make my own. I've almost achieved the taste I was looking for after the second try. I can live without going to restaurants if I can eat this dish at home. The key is keeping the crispiness of the Chinese chives. They were almost raw at a restaurant. Recipe by Tomomidon cookpad.japan -

After leaving Nagoya, I wanted to be able to experience the taste of Misen Ramen, so I looked into how to make it. Adjust the spiciness to your liking. For the ramen, I recommend uncooked fresh ramen with soup packets, but instant ramen is also fine. Soy sauce flavor is the standard, but miso and salt are also delicious. Try to time the preparation so that the noodles finish boiling right when the soup is done. For serving 2. I love cooking, and I've always wondered if I could make soup on my own. Now I'm able to do so regularly. And it's even more delicious than any store-bought version!A generous amount of oil make things more delicious. But everything in moderation! In Step 5, if you rinse the noodles in cold water after you boiling them, they will firm up and become delicious! You can also drizzle ra-yu spicy chili sesame oil at the end!Top with finely chili threads, and it will be just like ramen at a shop.Store chopped green onions in a ziplock bag and freeze, and you can take them out and sprinkle them on things any time you want - it's convenient.
