Ingredients

  2. 1 1/3 cupsbread flour (165g)
  3. 1/3 cupcake flour (45g)
  4. 1/2 teaspoonsalt (2g)
  5. 1 1/2 tablespoonssugar (20g)
  6. 1large egg (about 1 1/2 tablespoons, 20g; beat and add to milk)
  7. 1 1/2 tablespoonsunsalted butter (20g)
  8. 1/2 cupmilk (106g)
  9. 1/2 teaspoonactive dry yeast (2g)
  10. ★Filling★
  11. 1boneless, skinless chicken thigh
  12. 1/2medium onion
  13. 2 tablespoonssoy sauce
  14. 2 tablespoonsmirin
  15. 2 tablespoonssake (or dry white wine)
  16. 2 tablespoonssugar
  17. as neededMayonnaise,
  18. Beaten egg, as needed (for egg wash)

Cooking Instructions

    Place all dough ingredients into the bread machine pan. If your machine has a separate compartment for yeast, add it there. Start the dough cycle.

    Prepare the filling: Cut the chicken into small, bite-sized pieces.

    Cut the onion into pieces about 1 inch (2–3 cm) wide.

    In a bowl, combine the soy sauce, mirin, sake, and sugar. Add the chicken, massage gently, and let it marinate for about 10 minutes.

    Heat a little oil (not listed in ingredients) in a skillet. Sauté the onion until it becomes slightly translucent.

    Add the chicken along with the marinade to the skillet.

    Simmer until the sauce thickens and coats the chicken. Be careful not to burn it! Transfer to a bowl and let cool.

    Using your fingers, press the center of each ball to flatten slightly, leaving the edges thicker. Shape to about 5 inches (12 cm) in diameter.

    Place the shaped dough on a baking sheet lined with parchment paper, spaced apart.

    Let the dough rise a second time. Mist the dough and inside of the oven generously with water, and let rise at 104°F (40°C) for 40 minutes.

    After the second rise, preheat the oven to 400°F (200°C). You will bake for about 12 minutes later.

    Top each dough round with the prepared teriyaki chicken.

    Brush the exposed dough with beaten egg for a shiny finish.

    Drizzle mayonnaise over the top as desired.

    Bake in the preheated oven for about 12 minutes, or until golden brown. Adjust baking time as needed.
