Teriyaki Chicken Bread Rolls (Easy with Bread Machine)

Cooking Instructions

Place all dough ingredients into the bread machine pan. If your machine has a separate compartment for yeast, add it there. Start the dough cycle.

Prepare the filling: Cut the chicken into small, bite-sized pieces.

Cut the onion into pieces about 1 inch (2–3 cm) wide.

In a bowl, combine the soy sauce, mirin, sake, and sugar. Add the chicken, massage gently, and let it marinate for about 10 minutes.

Heat a little oil (not listed in ingredients) in a skillet. Sauté the onion until it becomes slightly translucent.

Add the chicken along with the marinade to the skillet.

Simmer until the sauce thickens and coats the chicken. Be careful not to burn it! Transfer to a bowl and let cool.

When the dough is ready, divide it into 6 pieces. Shape each into a ball, pulling the surface tight, and place them seam side down on a baking sheet, spaced apart.

Cover with a well-wrung damp cloth and let rest for 15 minutes.

After resting, gently press each dough ball to release air.

Using your fingers, press the center of each ball to flatten slightly, leaving the edges thicker. Shape to about 5 inches (12 cm) in diameter.

Place the shaped dough on a baking sheet lined with parchment paper, spaced apart.

Let the dough rise a second time. Mist the dough and inside of the oven generously with water, and let rise at 104°F (40°C) for 40 minutes.

After the second rise, preheat the oven to 400°F (200°C). You will bake for about 12 minutes later.

Top each dough round with the prepared teriyaki chicken.

Brush the exposed dough with beaten egg for a shiny finish.

Drizzle mayonnaise over the top as desired.

Bake in the preheated oven for about 12 minutes, or until golden brown. Adjust baking time as needed.
