In a pot, bring the sake and mirin to a boil to cook off the alcohol.

Turn off the heat, then add the soy sauce, rock sugar, and dashi powder. Stir until the sugar dissolves.

Ingredients to add to the hot pot:
Beef, onion, Japanese long onion (negi), chrysanthemum greens (shungiku), napa cabbage, shiitake mushrooms, enoki mushrooms, grilled tofu, and shirataki noodles.Simmer these ingredients in the warishita sauce and dip in beaten raw egg before eating.

Cut the onion into wedges and microwave for 3 minutes before adding to the pot.
