Rinse the beef tripe well under water. If you want to remove extra fat, place it in a strainer and pour hot water over it. Cut the cabbage into 2-inch (5 cm) squares and the garlic chives into 2-inch (5 cm) lengths.

Add the sliced garlic, chopped chili pepper, all seasonings, and water to a pot. Bring to a boil.

Add the beef tripe and cabbage. Even if the pot is full, do not cover with a lid; let it cook for a while. Add tofu if you like. When the cabbage softens and sinks, add the garlic chives.

Once the garlic chives are cooked, it’s ready to serve. Finish the meal by adding the ramen noodles to the pot.
