Ingredients

Makes about 40 gyoza wrappers
  1. 14–16 oz (400–450 g) cabbage or napa cabbage
  2. 7–9 oz (200–250 g) ground pork
  3. 1 3/4 oz (50 g)garlic chives (nira)
  4. 4-inch (10 cm) piece green onion
  5. 2 cloveseach garlic and ginger
  6. Seasonings
  7. 1 1/2 tablespoonssoy sauce
  8. 1 1/2 tablespoonstoasted sesame oil
  9. 2 teaspoonssake (or dry sherry)
  10. 1 teaspoonChinese chicken bouillon powder (like Better Than Bouillon or similar)
  11. 1 pinchumami seasoning (optional)
  12. Salt and pepper, to taste
  13. 2 tablespoonsvegetable oil (for frying)
  14. 1/2 cup (100 ml)boiling water
  15. You can also use 1 tablespoon soy sauce and 1/2 tablespoon oyster sauce
  16. You can substitute 1 whole green onion for the garlic chives
  17. Alternatively, use 1 1/2 tablespoons soy sauce and 1 teaspoon oyster sauce

Steps

    Boil the cabbage in salted water until wilted, then let it cool slightly. Finely chop and spread out in a colander to drain naturally. Do not squeeze out the water by hand.

    Finely chop the green onion, garlic chives, ginger, and garlic. In a bowl, combine the ground pork, garlic chives, green onion, ginger, garlic, cabbage, and seasonings. Mix well.

    Knead the mixture by hand until sticky. Place about 1 tablespoon of filling onto each gyoza wrapper, wet the edges with water, fold in half, and pleat to seal.

    Heat 2 tablespoons of vegetable oil in a skillet. Arrange the gyoza in the pan and cook over medium heat until the bottoms are lightly browned. Add about 1/2 cup (100 ml) boiling water.

    Cover and cook over medium heat. When the water has evaporated, shake the pan to prevent sticking and continue cooking until the bottoms are golden and crisp.

    Serve with a dipping sauce of soy sauce, vinegar, and chili oil.
    We use a 20-pack of thick gyoza wrappers for extra filling, and they turn out delicious and chewy.
