Simple Oven Dish: Black Pepper Salt-Baked Salmon / How to Choose Fresh Salmon / How to Preserve

Since I was young, my mom always said to eat more salmon to grow strong and healthy.
Salmon is a great source of Omega-3, which provides excellent protein and deep-sea fish oil!
Maybe I haven't eaten enough... my brain hasn't been very sharp. Tonight, let's make this simple oven dish: Black Pepper Salt-Baked Salmon to boost my brain! :P
Tips:
1. Make sure to complete step two thoroughly! Otherwise, the salmon will release too much water during baking, and the texture won't be firm.
2. The baking time usually depends on the thickness of the salmon. I chose salmon about 3/4 inch thick, and it takes about 30 minutes to bake! Keep an eye on the salmon to avoid overcooking. You can use a fork to test it (the texture should be firm and not sticky).

We love salmon in our house. There are so many way to flavor it and cook it. This is just one of the countless ways we enjoy it. Using mayonnaise helps lock in moisture and works as a great carrier for holding all the other flavors on the salmon. This dish pairs well with my Cheesy Parmesan Corn Meal Mush recipe (pictured). The most wonderful thing about cooking fish is its simplicity. You don't have to mess with the flavours too much; just add enough to bring out the best of the natural taste. This is especially true for salmon which has a rich and fatty natural flavour. I recommend using Canadian Farm Raised Salmon. This recipe is all about the citrus compliments as the salmon is baked with lemon and the whole dish is served atop a fragrant orange infused rice. A portion of steamed purple brussel sprouts and a small tomato basil salad round off the entire meal and in less than an hour, you'll be serving food that tastes like it took hours to make! ryandvy -
