Slice the carrot, onion, and cabbage. Cut a slit in the udon noodle packages and microwave for 1 minute at 600W.

Stir-fry the pork belly in a skillet.

When the pork is lightly cooked, add the vegetables from step 1 and stir-fry.

Add the udon noodles. Pour in the sake and stir-fry, breaking up the noodles as you go.

Season with the shirodashi, soy sauce, and black pepper. Serve on plates and top with bonito flakes.
