Rice Cooker Ketchup Rice Omurice

If you cook veggie-packed ketchup rice in a rice cooker, all you have to do is cook the eggs and place them on top for delicious omurice! Both kids and adults love it.
Recipe background:
When I used to make a single serving, I would season and stir-fry plain rice, but making five servings at once in a frying pan was tough. Stir-frying until the seasonings were evenly mixed made the rice mushy. This recipe adjusts the amount of seasonings and water so you can make a large batch of omurice rice at once.

Steps
- 1
Rinse the rice, then add enough water to just cover it (for my rice cooker, up to the 2-cup line). Let it soak for about 30 minutes. Meanwhile, prepare the other ingredients.
- 2
Finely chop the onion, carrot, bell pepper, and bacon. Cutting the veggies small makes it easier for picky eaters to enjoy them.
- 3
Add the seasonings. If using a bouillon cube, crush it before adding. Add water up to the 3-cup line, then mix the seasonings well with chopsticks.
- 4
Add the vegetables, then cook as usual in the rice cooker. While it's cooking, the delicious aroma will fill your kitchen!
- 5
Once the rice is done, gently mix it, cover, and let it steam for another 10 minutes.
- 6
Before cooking the eggs, shape the rice into an oval (like a football) on a plate.
- 7
Add butter to a frying pan and melt over medium heat.
- 8
Beat the eggs with mayonnaise until well mixed, then pour into the pan. Quickly stir with chopsticks to add air and create a soft texture.
- 9
When the bottom is set but the top is still slightly runny, slide the egg onto the rice. Top with ketchup and enjoy!
