Jollof is a one-pot rice dish popular in many West African countries; in place of rice I decided to use Noodles.

Per boil water in a pot, add curry and 2 out of the 3 noodles spices

When water comes to boil add noodles and allow it cook till its medium tender and drain out any water from the noodles.

Heat pan on fire, add vegetable oil; sautee onion for about 1min, then add diced pepper and tomatoes and fry for another 4mins and add remaining sachet spice; stir properly

Add cooked noodles to the sauce and stir properly till noodles and paste are mix properly

Cook for another 3 minutes and plate.
