I tried a keema curry with black garlic at a cafe and it was so delicious that I decided to try making it myself.
Cooking Instructions

Finely chop the onion, carrot, and king oyster mushrooms. A food processor is convenient for this.

Grate the garlic and ginger.

Heat oil in a frying pan, add the garlic, ginger, and chili pepper. Cook on low heat to bring out the aroma.

Add the chopped onion and sauté. Adding salt helps reduce moisture and enhances flavor.

Add the chopped onion again. Add salt to enhance flavor.

Once the carrot is tender, add the curry powder and mix well.

Add the ground meat and sauté. Season with salt and pepper.

Once the meat is cooked through, add the chopped king oyster mushrooms and black garlic, and sauté.

Add the ● seasonings and mix well, sautéing a little longer. Adjust the salt and pepper to taste. You can also add garam masala if you like.
