Boil the guajillo chiles for just 5 minutes. Once cooled, blend them with all the other ingredients, adding a little water.

Wash the chicken and pour the blended mixture over it. Strain the mixture and let the chicken marinate for about 2 hours with salt to taste.

After marinating, wrap each piece of chicken with a bay leaf in parchment paper. Cook for about 1 hour and 30 minutes. Serve with Mexican red rice. Delicious <3
