Ingredients

Makes 6 buns
  1. 1 2/3 cupsbread flour (about 200 grams)
  2. 1/3 cupcake flour (about 50 grams)
  3. 3/4 cupwater + egg yolk (about 170 grams)
  4. 1 1/2 tablespoonssugar (about 20 grams)
  5. 3/4 teaspoonsalt (about 4 grams)
  6. 1 teaspoondry yeast (about 3 grams)
  7. 1 1/2 tablespoonsbutter (about 20 grams)
  8. For decoration (optional)
  9. Beaten egg, sesame seeds, to taste

Cooking Instructions

    Knead the bread flour through dry yeast in a bread machine for 15 minutes.

    Add butter and knead for another 15 minutes.

    Let rise at 86°F (30°C) for 60 minutes (first proof).

    Let rise at 95°F (35°C) for 30 minutes (second proof).

    Preheat the oven to 430°F (220°C), then lower to 390°F (200°C) and bake for 10-13 minutes until done!
