Ingredients

  1. 500 gkaddu
  2. 1tsp red chilli powder
  3. 1tsp coriander powder
  4. Salt as per taste
  5. 2tsp oil
  6. 1tsp cumin seeds
  7. 1tsp fenugreek seeds
  8. 2red chillies
  9. 1/2tsp asafetida
  10. 1/2tsp haldi powder
  11. 1/2tsp kala namak
  12. 1tsp garam masala
  13. 1/2tsp fenugreek leaves (kasuri methi)
  14. Pinchamchur powder
  15. leavesCoriander

Steps

25 minutes
  1. 1

    Heat 1 tbsp oil in a pan
    Add whole spices – Cumin seeds, fenugreek seeds, red chillies, and asafetida. Toast until fragrant.

    Add ground spices – turmeric, kala namak and coriander powder, red chilli powder, salt (except garam masala). Cook for about a minute.
    Add pumpkin cubes, saute well and cook on medium high flame until pumpkin starts losing water.

    Then cover and bring to medium-low and cook for about 20 minutes.
    Every 5 minutes, stir and mix pumpkins with the spicy paste until everything looks red-ish and homogenous.

    Once the pumpkin cubes are soft, add garam masala, crushed fenugreek leaves and amchur powder (if using).
    Cook on low for another 2-3 minutes.
    Top it off with freshly chopped coriander leaves.
