#GlobalApron week 7 using buttermilk. This is a food network recipe from Valerie Bertinelli. I was skeptical if the chicken would be crispy but it came out crispy and moist. I used bone in skin on large chicken thighs vs cutting up a whole chicken.

Ingredients

  1. 1 cupbuttermilk
  2. 1 teaspoonhot sauce
  3. 2 teaspoonsgarlic powder
  4. 2 teaspoonsonion powder
  5. 2 teaspoonskosher salt
  6. 4-6large chicken thighs or a 3 1/2 - 4 pound whole chicken cut into 10 pieces
  7. 2 cupspanko bread crumbs
  8. 1 teaspoonpaprika
  9. 1/2 teaspooncayenne pepper
  10. Freshly ground black pepper
  11. Nonstick cooking spray

Cooking Instructions

    Throughly wash and pat dry the chicken.
    In a large bowl stir together the buttermilk, hot sauce, and 1teaspoon each of the garlic powder, onion powder and salt. Add the chicken and toss to coat. Refrigerate for at least one hour up to overnight.

    Preheat oven to 425 degrees Fahrenheit.

    In a large resealable bag add breadcrumbs,paprika, cayenne
    and remaining onion powder, garlic powder and salt. Seal and shake bag to combine. Remove chicken from the wet mixture and add to bag. Seal bag and shake to coat the chicken.

    Line a baking sheet with a rack. Spray rack with nonstick spray. Arrange the chicken on the rack, skin side up, and spray the chicken generously with cooking spray.

    Bake until chicken is golden brown and cooked through about 40 minutes.
