Dahi Bhindi Masala is one of the famous curry or dhaba style sabzi. You can enjoy with fulka, roti, paratha, puri, or with steamed rice.
Steps

Wash okra and wipe off with a cotton towel. Cut into desire shape. Take curd, add salt, red chilli powder, turmeric powder, jeera coriander powder, and garam masala. Mix well. Make a smooth paste. Keep aside.

Heat a kadai, add oil, mustard seeds, and hing. Saute okra until becomes soft. Transfer in a plate. In the same kadai, with leftover oil, add chopped onions, saute it until becomes transparent. Add crushed garlic. Saute it.

Now add chopped tomatoes, cook it till turns soft. Add dahi masala paste and stir constantly to avoid curdle. Cook till oil releases on the sides of kadai.

Add water for semi thick gravy. Stir well. Add bhindi, and mix well. Cook it on a slow flame, so dahi masala gravy will coat all okra.

Ready to serve. Serve hot with roti, Puri paratha, or steamed rice.
