These burritos won't be too spicy as I listed here, at least to me. Very filling, you can do some additions like salsa or sour cream or taco seasoning as well. Quick dish to make, takes about 30 minutes or so. Hope you enjoy!

Ingredients

About 30 minutes
About 4 - 6 servings
  • 1-1.25 LBGround beef
  • 1 CupWhite Rice
  • 2 CupsWater
  • Halfa 15 oz can of black beans
  • 1Yellow onion
  • 1Tomato
  • 1 (8 oz)bag of Mexican blend shredded cheese
  • 1 (10.75 oz)can of Campbells tomato soup
  • Garlic Powder (or chopped garlic if you wish)
  • 2 tablespoonschili powder
  • Cayenne pepper seasoning (amount you use is up to you)
  • Burrito Tortilla Shells
  • 2 qtbaking dish (3qt is what i used as its all i had, still works)
  • Optional Toppings
  • Pace Picante Sauce
  • Sour Cream

Steps

About 30 minutes

    Start with the rice. Bring 2 cups of water, 1 cup of rice, and a tablespoon of butter or margarine to a boil. Stir to get rice unstuck from the pan, then reduce heat and cover tightly. Cook on low without stirring for 15-20 minutes until water is all gone.

    While the rice is cooking, Start browning the ground beef. While browning Add some garlic powder, salt, pepper, and (optional) some Worcestershire sauce.

    Once meat is browned, drain meat and put back in pan. Mix in can of tomato soup. Add in some more garlic powder, chili powder, and Cayenne pepper seasoning. Dice up onions and tomatoes to desired quantities and mix into pan. Next open the can of black beans, drain and rinse. You can mix in as much as you wish, i used a half a can. You can adjust chili powder and cayenne pepper till it reaches desired taste. Heat thoroughly until entire mixture is heated.

    Preheat oven to 400F. Grease/butter the bottom of the 2 qt baking dish to ensure it don't stick. Once rice is done Spread across bottom of pan. Next spread in the meat mixture from the pan on top of the rice. Finally take the bag of shredded cheese(I used Mexican blend) and spread as much as desired on the top until covered. Finally put in the preheated oven for 10 minutes or so or until cheese is fully melted. After that, take it out and its ready.

    Take your burrito tortilla shells(you can warm them or eat them cold), add a layer of shredded cheese to the tortilla shell, put as much mix as desired on top. Here you can just wrap and eat or add anything else desired like sour cream or salsa.
