Sweet Potato Mukimo

Mukimo is a staple food for the people in Central Kenya. It’s made from mashed potatoes and corn and/or beans.
Normally Mukimo is serves with mutton or beef stew but I am making only Mukimo..
So, I created my own version of Mukimo with the Sweet potato,Here it is.

So, I created my own version of Mukimo with the Sweet potato,Here it is.
Steps

Wash and boil the sweet potato.
Remove the skin and grate with a steel strainer so we get a smooth texture.
Make other ingredients ready. - 2
Take a Ghee in a nonstick pan,add chopped onion and salt, saute well.
Now Add Sweet corn and peas followed by sweet potato mixture.mix with the veggies. - 3
Now add milk and combine with the mixture till sweet potato absorbs the milk.
Lastly,add fresh coriander,mix well and leave on the gas for 2 minutes then switch off the flame. - 4
Yummy sweet potato Mukimo is ready.
Serve in the plate,
Garnish with some boiled peas and serve.
Enjoy very nutritious Mukimo..
