Creamy Rice and Broccoli (using leftover rice)

I was craving a rice pudding, but needed to do something to go with our grilled chicken. So I came up with a savory rice pudding that is creamy and flavorful. I had frozen broccoli on hand, but sautéed spinach would also be good. Feel free to put in whatever seasonings work for you. My pre-cooked rice already had some seasoning in it, so the measurements here are approximate for plain rice.

Ingredients

  • 2 1/2 cupscooked rice
  • 2 1/2 cupsmilk
  • 1 Tbspcoconut oil
  • 1 Tbspdried cilantro
  • 1 tspSpanglish Asadero All Purpose Seasoning
  • 1 tspGarlic & Herb Seasoning
  • 1 tspChile and lime seasoning
  • 1 tspsugar
  • 1/2 cupshredded Mexican blend cheese
  • 1/4 cupgrated parmesan cheese
  • 1/2 lbcooked broccoli
  • Salt and pepper to taste

Steps

30 mins
  1. 1

    Put the rice, milk, coconut oil, and seasonings into a large saucepan. Heat over medium low heat, stirring occasionally to prevent scorching, about 15 minutes.

    When mixture starts to thicken, add sugar and continue cooking until bubbles (or air pockets) start to form, about 5 minutes.

  3. 3

    Turn heat down to low and add in cheese, stirring until incorporated and thickened to rice pudding consistency (5 mins).

  4. 4

    Turn off heat and add cooked broccoli, stirring gently to incorporate. Season with salt and pepper as desired.

  5. 5

    Serve immediately with your favorite protein.
