Crockpot Eggplant Parm
Steps

Cut up eggplant into strips after cleaning them. Crack and whisk eggs into bowl & in other bowl put breadcrumbs.

Spray pam into crockpot & cover the bottom with marinara sauce.

Dip eggplant slices into egg & then roll until covered in breadcrumbs. Place side by side to cover marinara sauce.

When one layer of eggplant is complete, sprinkle cheese and then cover cheese with a layer of sauce.

Repeat until crockpot full or ingredients used. Cook on low/ high until done.
