I always seem to cook too much rice. This recipe turns leftover rice into a crispy, tasty pancake that can be eaten on its own or used as a base for all kinds of toppings. I like to eat my rice pancakes topped with an egg, but you could also use kimchi, pulled pork, ham, etc. Or they’re great on their own! 😋

Ingredients

About 4 minutes per batch.
Makes 8 pancakes
  1. For Pancakes:
  2. 2 cupsleftover rice
  3. 2large eggs
  4. 1/4 teaspoonsalt
  5. 1/8 teaspoonfreshly ground pepper
  6. 1/2of a shallot, diced (enough for about 2 tablespoons)
  7. 1/2 teaspoonfresh thyme leaves (or 1/4 teaspoon dried)
  8. 1/4 cupshredded cheese of your choice (like mozzarella, Parmesan, cheddar, Colby, etc.)
  9. 3 Tablespoonsneutral oil for frying
  10. For Sunny Side Up Egg
  11. 1-2eggs per serving
  12. Butter for frying
  13. Parsley (optional, for topping)

Steps

About 4 minutes per batch.
  1. 1

    Finely dice half a shallot.

    Fry the shallot in a small amount of neutral oil (or a pat of butter, if you prefer). Cook until the shallot is translucent. Set aside to cool slightly.

    In a medium size bowl, whisk two large eggs. Add the salt, pepper, and thyme. Stir well.

    To the egg mixture, add the 2 cups of rice and stir well.

    Add the cheese and cooled shallots. Stir again until everything is well blended.

    Heat 3 tablespoons of neutral oil in a nonstick skillet over medium-low heat. I used canola oil. Transfer enough of the rice mixture to the skillet to form pancakes.
    The rice mixture initially will be very loose and won’t stick together too well. Don’t worry! Just use a silicone spoon or your spatula to press the pancake into around shape, and then let it fry.

    Allow the pancakes to fry for approximately two minutes. Flip them and continue to cook the other side. The goal is to cook the pancakes to deeply golden brown.

    Transfer the pancakes to a paper towel-lined plate to drain.
    Continue this process until all of the mixture has been made into pancakes.

    Wipe out the skillet and use it to cook your sunny side up egg.
    Place the egg on top of the rice pancake, sprinkle with parsley, and serve!

    Notes:
    🍚 Fully cooked bacon or finely chopped ham (or even Spam!) can be added to the pancakes if you prefer.
    🍚 If you don’t like shallots, you can use sweet onion or green onion instead.
