Cooking Instructions

Slice potatoes in 1/4 inch slices. Put in large saucepan. Put enough water in pan to cover potatoes. Bring to a boil over medium-high heat. Boil just until tender. Drain.

Melt butter in skillet. Add mushrooms & onion salt. Saute until tender. Drain.

Preheat oven to 350 degrees. Grease a 13x9 baking dish.

Combine cottage cheese, yogurt, & 1 1/2 cups cheddar in medium bowl.

Layer potatoes, mushrooms, & cottage cheese mixture in prepared baking dish. Sprinkle each layer with thyme, salt, & pepper. Sprinkle with remaining cheddar.

Bake until bubbly, about 30 minutes.
