Salmon en papillote

Salmon en papillote is a fancy name for cherry tomato halves roast on top of salmon fillets baked in paper. It makes a delicious, easy fuss-free dinner.
The recipe is simple, but so delicious and so good for you too. In fact, it is so simple you can practically cook it from the picture!
Layer the salmon on top of carrots and onion rings and top it with tomatoes, garlic and rosemary on parchment paper and wrap it up. You can even do it a night before cooking. When the time for dinner comes, you can steam, grill, roast or pan-grill the packages—though roasting are easiest.
The herb and vegetable can be varied at will, as long as the vegetable will finish cooking at the same time.
I simply seasoned salmon with salt and pepper, added cherry tomatoes, drizzled olive oil and baked it in the oven. After it was baked I broiled the fish for 2-3 minutes just to crisp up the top and get few charred marks on tomatoes. With just a handful of ingredients something altogether pleasing comes out in a short time.

Preheat oven 375F.

Grate the carrot with a peeler and set aside.

Line a baking tray with parchment paper and arrange carrot, onion and season with salt and pepper and drizzle of olive oil.

Place a salmon fillet on top of the onions and place tomatoes on top with half a clove of garlic and rosemary sprig.

Season with salt and pepper and drizzle of olive oil.

Close the parchment paper (like an envelope) and repeat the process with the remaining fillet.

Bake for 25 minutes, unwrap the salmon and if desired, broil for a few minutes.

Serve with the baked vegetables.
