Idada is a delicious, fermented and steamed delicacy from Gujarat. Idada also known as safed (white)dhokla is a type of dhokla. Idada is prepared from rice and black gram (udad dal), soaking, grinding and fermenting. Idada flour is also available in market. If you want non fermented and quick version, you can use semolina. In mango season, Idada is consumed with aamras (mango juice). This combination is very popular amongst Gujaratis. It tastes very delicious. It needs advance planning to prepare.

Ingredients

16 hours 40 minutes
4 persons
  • 1 cupurad dal (split & skinned black gram)
  • 3 cuprice
  • 1 tspfenugreek seeds
  • 1 tbspgreen chilli paste
  • 1 tbspoil
  • 1 tspcooking soda
  • 2 tbspoil (for tempering)
  • 1 tspmustard seeds
  • 1 tspsesame seeds
  • 1 tbspfinely chopped coriander

Steps

16 hours 40 minutes
  1. 1

    Wash and soak rice and black gram separately for 7-8 hours. Add fenugreek seeds along with black gram.

    Once soaked,grind both separately in a smooth paste. Then mix both pastes, cover and keep it in warm place for fermentation for 7-8 hours. Then add salt and chilli paste and mix well.

    Add water in a steamer and turn on the flame. Grease the mold, thali or plate. Add oil in batter and whip well. Lastly add cooking soda, mix nicely.

    Immediately pour the batter into greased thali and keep it in the steamer. Sprinkle pepper powder over it. Cover and let it steam cook for ablout 15 minutes.

    Heat oil and prepare tempering. Pour it on dhokla
    Cut it in desired shape.

    Garnish with coriander and serve hot with chilled aamras, coriander chutney.

    Note:
    1. Can add cumin seeds, curry leaves in temepering.
