Vermicelli Upma
Steps

First of all chop all the vegetables. Heat ghee in a pan and roast vermicelli for 2 minutes and keep aside.

Heat oil in the same pan and saute the cashews and keep aside. Then add cumin seeds, asafoetida, lemon. Add onion, capsicum, carrot and peanuts and saute for 2 minutes. Not over cook.

Add all the spices and vermicelli to it, add 2 cups of water and cover and let it steep. In 7-8 minutes the water will be absorbed and the vermicelli is ready.Add coriander and remove from heat.

Serve hot.. Lemon juice can be added on top which is totally optional.
