Ingredients

Serves 1 serving
  • 2 teaspoonsminced garlic (about 6 grams)
  • 7shallots, thinly sliced
  • 2 tablespoonswhiskey (such as Jack Daniel's) (about 30 ml)
  • 3 slicesbacon
  • 1 pinchsalt
  • 1 pinchground black pepper
  • 1 teaspooncornstarch (about 3 grams)
  • 2 teaspoonswater (about 10 ml)

    Mince the garlic and set aside. Wash the shallots, peel them, soak in water for 10 minutes, then slice them lengthwise into thin pieces.

    Cut the bacon into small pieces. Place in a skillet with a little water. Turn the heat to high and bring to a boil, stirring until the water evaporates and the bacon starts to release its fat. Reduce to low-medium heat and cook the bacon slowly until crispy. Remove the bacon and set aside. If there's a lot of bacon fat left, pour off the excess and leave about 1 1/2 tablespoons in the pan.

    With the pan over medium heat, add the sliced shallots. Sauté slowly until the shallots are soft and translucent. Season with salt and black pepper, but don't make it too salty yet since the bacon will add saltiness. Continue cooking until the shallots turn golden brown.

    Add the minced garlic and sauté until fragrant and the garlic is slightly golden. Pour in the whiskey and let it boil to cook off the alcohol.

    Add the crispy bacon back to the pan. Mix the cornstarch with water, then pour it into the pan, stirring until the sauce thickens. The sauce is ready when it has a nice, thick consistency.

    Pour the sauce over steak and serve.
