Amaranth leafy vegetable is a flavourful , nutritious leafy vegetable available at this time. In my state Odisha, variations of delicious recipes are prepared from amaranth leafy vegetables. In Puri Jagannath temple this leafy vegetable is cooked with fresh vegetables and grated coconut.
I have prepared with a variation, using yellow split moong dal for a different one recipe. My mother used to add, urad dal bodi, grated coconut along with daal and it's very delicious. I have taken, both green and purple Amaranthus saag. In Odisha we call this saag as Koshala Saag

Steps

Arrange and assemble the required ingredients. Clean, wash and chop amaranth leafy vegetables. Discard hard stems. Take along with the boiled lentils.

Heat oil in a pan. Add and allow to crackle mustard seeds. Further, add chopped onion, garlic, green chillies and dry red chilli. Fry all on medium to low flame till aromatic.

Add chopped pumpkin and brinjal and fry till half done.

Then add chopped Amaranth and boiled lentils. Add salt as required and cook till done. The delicious recipe is ready to serve with the main course. Thanks 😊
