Mix the flour, salt, and yeast together.

Add the warm water and sugar, then knead for 15 minutes until the dough is smooth and easy to cut. Cover the bowl and let the dough rise for 1 hour.

Divide the dough into balls about the size of your fist, dust them with flour, and make about 15 pieces.

Use a rolling pin to roll each ball into a thin, round sheet.

While baking, heat a griddle or, if you have one, a saj until it is very hot. To test, sprinkle some water on the surface—if it evaporates quickly, it's ready.

Place a dough round on the hot surface. You’ll see air bubbles form; wait about a minute until the bottom turns golden.

Flip to the other side. You won’t see bubbles this time.

Wait another minute, then remove the bread and cover it with a cloth. Repeat until all the bread is baked.
