Ingredients

  1. for marinade
  2. 100 ggala apples
  3. 50 gbrown onions
  4. 3 tbspKorean chili paste
  5. 3 tbspsoy sauce
  6. 3 tbsphoney
  7. 2 tbspKorean chili flakes
  8. 2 tbspmirin
  9. 1 tbspminced garlic
  10. 1 tbspminced ginger
  11. 1/8 tspgrounded black peppercorn
  12. for meat
  13. 600 gpork shoulders (2 x 1 x 0.2 inches)
  14. 1medium onion (julienned)
  15. 30 ggreen onions (chopped)
  16. 1 tbsptoasted sesame seed
  17. for risotto
  18. x cup arborio rice
  19. x g minced onion
  20. x butter nuggets
  21. x ml white wine
  22. x g cottage / peers cheese
  23. x g shitake mushrooms
  24. x ml cooking oil
  25. x cubed cucumber
  26. x shredded lettuce
  27. x L pork stock

Steps

  1. 1

    Blend together all marinade ingredients then marinate meat for 30 min.

  2. 2

    Toast mushrooms then melt butter and add olive oil

  3. 3

    Sautee onions and garlic until onions become translucent and aroma of garlic is released

  4. 4

    Toast rice until ends become translucent

  5. 5

    Deglaze with white wine then stir until liquid is absorbed by the rice

  6. 6

    Keep pouring ladles of pork stock on the risotto and keep stirring until risotto is almost done

  7. 7

    On the last ladle of stock, add the butter, cheese, cucumber and lettuce then cover

  8. 8

    During the last 10 min. of cooking the risotto, start cooking the meat

  9. 9

    Once the meat is 70% done, add the julienned onion then when done, top with sesame seeds

  10. 10

    Place the cooked meat on top of the risotto and finish with the chopped green onion
