Italian Style Meat Stuffed Shells

This take on meat stuffed shells cooks the filling in the shells for more of a meatloaf texture instead of the typical browned meat. It's a flavorful Italian syle meat mixture with beef and Italian sausage with the added surprise of a creamy melty cheese center! These were by far better than the traditional stuffed shells.

Ingredients

1 hr 15 minutes
6-8 servings
  • 25-30jumbo pasta shells, precooked just until tender
  • 2-3 jarsmarinara sauce, homemade or your favorite
  • For Filling
  • 1 poundground beef
  • 1 poundItalian sausage, (hot or mild) casings removed
  • 1small onion, minced
  • 1jalapeños, minced (optional if you like spice)
  • 12 slicespepperoni
  • 2garlic cloves, minced
  • 1 tablespoonbutter
  • 1/2 cupfresh Italian bread, crusts removed made into crumbs
  • 1/4 cupheavy cream
  • 2 tablespoonssour cream
  • 1 teaspoonworcestershire sauce
  • 1 teaspoonItalian seasoning
  • 2 tablespoonfresh chopped basil
  • 1/4 cupfresh grated romano cheese
  • to taste salt and pepper
  • 1egg, lightly beaten
  • 1 cupshredded Italian 4 cheese blend shredded
  • For Cheese Center
  • 24 cubescreamy jack cheese or any good melting cheese (about 4 oz)
  • For Topping
  • 2 cupsItalian four cheese blend, shredded
  • 1/4 teaspoonItalian seasoning
  • 2 tablespoonschopped fresh basil
  • 2green onions, sliced

Steps

  1. 1

    Cook pepperoni in a small skillet until crisp, remove to paper towel to drain.

    Melt butter in the skillet and add onion, jalapeño, and garlic, season with salt and pepper and cook just until soft. Let cool.

    Combine bread crumbs with cream and let stand until absorbed.

    In a large bowl combine meats with remaining filling ingredients, adding cooled onion mixture, soaked bread crumbs and crisp pepperoni finely crumbled.

    Add a layer of marinara sauce to prepared pan. You will probably need to use 2 pans to get all the shells in.

    Fill shells with meat mixture.

    Press a cheese cube into the center of each filled she'll, covering it completely with the meat.

    Place shells in one layer in prepared pan on top of sauce.

    Cover with rest of sauce.

    Cover pan with foil and bake 50 minutes.

    Remove foil and add remaining cheese, then sprinkle with the italian seasoning, basil and green onion and cook until cheese is melted. About 10-15 minutes.

    Serve with remaing sauce on the side. Enjoy.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
