I originally saw Ellie Krieger make this on her show “Healthy Appetite with Ellie Krieger“. She called it "Mom's Turkey Meatloaf". I have been making this since my 16 year old was a toddler. I renamed it this name because it's true... it doesn't taste like a turkey meatloaf or as healthy as it is for you. I think I have changed it a bit from the original, too.

Ingredients

  1. 3/4 cupquick-cooking oats, GF certified if needed
  2. 1/2 cupunsweetened almond milk (or skim milk)
  3. 1medium onion, peeled (divided)
  4. 2 poundsground turkey (I use Jennie O Lean)
  5. 1/2 cupschopped red bell pepper
  6. 2eggs, beaten
  7. 2 teaspoonsWorcestershire Sauce, make sure GF if needed
  8. 1/4 cupketchup
  9. 1/2 teaspoonsalt
  10. fresh ground black pepper
  11. 1 (8 oz)can tomato sauce

Cooking Instructions

    Preheat your oven to 350 degrees.

    In a small bowl, stir the oats and milk together.

  3. 3

    Thinly slice 1/4 of the onion and set it aside.

  4. 4

    Finely chop the remaining onion.

  5. 5

    In a large bowl combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire Sauce, ketchup, salt, and a few grinds of pepper. Mix just until well combined.

    Transfer the mixture into a 9 by 13 inch baking dish. Shape into a loaf about 5 inches wide by 2 1/2 inches high.

    Pour the tomato sauce evenly over the meatloaf.

    Spread the sliced onions evenly over the top.

    Bake for about 1 hour or until a meat thermometer registers 160 degrees.

    Remove from oven and let rest for 10 to 15 minutes before slicing and serving.
