Mix all this together (except the oil for frying)to make a crumbly texture. Now add warm water very slowly to make a tight and a very firm dough.

Let it rest for about half an hour to allow the suji to absorb the moisture. Now make small balls out of the dough and roll them into matthis. Pierce them with a fork from both sides.

Heat oil in a kadhai for frying and fry the matthis in batches in medium hot oil till golden and crisp. Drain on tissue paper.

Store in airtight containers when completely cool and enjoy with hot tea ☕️👍😊
