Almond date eclairs

ALMONDS DATE ÉCLAIR: Almond Date Éclairs are a sweet treat that contains just three ingredients. They are made in a food processor or high-power blender. Unlike many sweet treats you might enjoy, they have fiber, protein, and healthy fats!
To make these delicious eclairs, you will need unsalted almonds that have been ground to coarse powder, dates and melting chocolate. Soak the dates in hot water and then remove the seeds. Blend to a paste and knead to form a dough with the almond powder.
With slightly wet fingers (a bit of water prevents the dough from becoming a sticky disaster all over your hands!) give a shape and coat in melted chocolate. Dip the ends in chocolate again and then coat with almond powder.
These eclairs are super healthy, do not contain any refined sugar and can be made in under 15 minutes. Kids love it and it does not take a whole lot of effort to make them; a win-win.
They are best kept in the fridge and can be stored for up to one month.

Soak the dates in boiling water till soft and pliable.

Remove the dates and deseed.

Make a paste of the dates in a food processor and set aside.

Dry roast the almonds and cool slightly.

Grind into a coarse powder. Reserve about 2 tablespoons of the powder and add the remaining to the date paste.

Knead the date paste and almonds to get soft dough.

Shape the date dough into small oblong bars and set aside.

Melt the chocolate chips and dip the date bars in chocolate.

Remove on parchment paper to set.

Once set, dip the ends of the bars in chocolate and then in coat with reserved almond powder.

Drizzle some chocolate on top and allow to set.
