Monkfish Tail with Fennel, Skyr, Lemon, and Mediterranean Spices

Rinse and pat dry the monkfish tail. Remove the skin and central bone.

Wash and slice the fennel. Preheat the oven to 400°F (200°C).

Place the fennel in a baking dish and add the spices.

Mix well, then season with salt and pepper.

Juice the lemons and add the juice to the dish. Mix again.

Add the skyr and mix to combine.

Lay the monkfish fillets on top.

Press them gently, turn them over, and bake for 20 minutes.
