Ingredients

  1. 1 cupcoarse bulgur (about 180 grams)
  2. 2 cupspre-salted chicken broth (about 480 ml)
  3. 1/2 cupvermicelli noodles (about 50 grams)
  4. 1small onion
  5. 4 tablespoonsvegetable oil
  6. 2.2 poundstomatoes (for the tomato sauce) (about 1 kg)
  7. 1large onion
  8. 1green bell pepper
  9. 1 teaspoondried cilantro
  10. 1 teaspooncooked hot pepper paste
  11. 1/2 teaspoonblack pepper
  12. 1 teaspoonground cumin
  13. 1/4 cupwater (about 60 ml)
  14. 1 teaspoonsalt
  15. 4 tablespoonsvegetable oil

Steps

  1. 1

    To prepare the bulgur: Rinse the bulgur well. Finely chop the onion.

  2. 2

    Sauté the onion in vegetable oil until soft. Add the vermicelli and cook until golden. Add the bulgur and stir for a minute, then pour in the chicken broth. Once it boils, reduce the heat and simmer until everything is cooked and the bulgur is fluffy.

    For the tomato sauce: Wash, peel, and chop the tomatoes into small pieces. Chop the onion into medium pieces. Remove the seeds from the bell pepper and chop it into medium pieces.

    In a pot, sauté the onion in vegetable oil until golden. Add the bell pepper and cook with the onion. Add the tomatoes, water, spices, hot pepper paste, and salt. Bring everything to a boil, then simmer until the tomatoes are cooked down and the sauce thickens.

    Serve hot and enjoy!
