Black Bean Avocado Salad

Ingredients

  1. 1/3 cupolive oil
  2. 1/4 cuplime juice
  3. 1 clovegarlic, minced
  4. 1 tspsalt
  5. 1/8 tspcayenne pepper
  6. 1 canseasoned black beans, drained and rinsed
  7. 1 1/2 cupsfrozen corn, thawed
  8. 1avocado
  9. 1bell pepper, diced
  10. 15grape tomatoes, halved
  11. 3green onions, thinly sliced
  12. 1/2 cupcilantro, chopped

Cooking Instructions

  1. 1

    For the dressing, mix first 5 ingredients in blender until fully combined

  2. 2

    Mix all remaining ingredients except avocado and cilantro and combine with dressing. This can be made ahead and refrigerated, or leftovers can be stored, but not with the avocado and cilantro in it.

    When ready to serve, mix in the avocado and cilantro and serve immediately. Enjoy!
