Black Bean Chicken Salad

Ingredients

4 servings
  1. 2boneless, skinless chicken breasts
  2. 1large head romaine lettuce, washed and torn
  3. 1 canblack beans, drained and rinsed
  4. 3/4 cupsalsa
  5. 1 cupwhole kernel corn
  6. 1 cupdiced tomatoes
  7. Blue or yellow (organic) corn tortilla chips, coarsley broken
  8. 1/2 cupshredded cheese
  9. 1 cupdiced cilantro
  10. DRESSING: 3/4 cup salsa
  11. 1 cuplow-fat plain greek yogurt (or substitute Greek cultured coconut milk)
  12. 1/2 tspground cumin
  13. low-fat milk

Cooking Instructions

    Bake, grill, or saute chicken until cooked throughout

  2. 2

    Whisk salsa, yogurt and cumin. (If dressing is too thick add small amount of milk to thin)

    Divide lettuce onto 4 plates.

    Add warm chicken breast on top of lettuce.

  5. 5

    Sprinkle beans, corn and tomatoes over chicken breast.

  6. 6

    Drizzle dressing over chicken.

  7. 7

    Add cheese, cilantro and chips.
