Homemade Lemon Pickle is a great Condiment loved by all. Pickle lovers do it all by themselves if they can. And it's always done with both Lemon and Mango Pickles in Summers by me. I had been following this recipe of my grandmother ever since I started it myself for my family. My hubby is an ardent Pickle lover. I make different Pickles mainly for him.
After two Weeks this is ready to be consumed and it keeps becoming more yummy and delicious as it ages. This is just perfect for everyday meals. Not only Rice, Khichdi, Parathas, Puris etc, it goes well with many snacks too. It's tangy, spicy and lip-smackingly delicious. The tartness of the Lemons will be very well balanced by the Chilli. You will love it for sure.

Steps

Wash and pat dry all the lemons. See to it that they are fully dried. Cut them into two or four according to one's own choice. Remove as many seeds as possible.

Add them to a clean sterilised jar with salt and turmeric powder. Cover and set aside in a clean and ventilated space in the kitchen for a Week or two. Keep shaking the jar every now and then.

The lemons will release a lot of water. And over the stipulated time of a Week or two, the lemons would become soft and tender. After two Weeks, it is time for tempering.

Dry roast the pickle spices. Grind to a semi coarse powder. Remove the lemons into a wide plate or a bowl along with the juicy water. Add the ground pickle masala to it at first followed by the red chilli powder. Crush or finely chop garlic and add it as well.

Now the final step of tempering the pickle. Heat oil. Bring it to a smoking point. Add all the ingredients one by one. Do it on a low heat. Allow the oil to cool down a little. And next is to add the hot oil to it. It shouldn't be very hot.

Mix well and the Pickle is all set. Let it cool down fully. Add it back to the jar. Cover and set aside. It's ready to be relished. Enjoy!
