Mix yeast, sugar, and water, and let sit 5 minutes. Whisk together all other ingredients. Mix all together with a wooden spoon until combined. Knead 5-10 minutes until you get a "smooth" ball. Leave in a greased bowl with plastic wrap and let rise about 1 hr, or until doubled. Form into a log, cut 4-5 equal pieces, and leave the ones you're not working with under a towel or plastic wrap. Flour your surface and roll out each ball to a fairly thin round, maybe 1/4 inch.

Keep these covered until you cook them. To cook heat up a skillet with 1 T of oil at medium heat. Throw the Pita on top of the oil and swirl around, leave to cook for 1-2 minutes, flip, and repeat until you get nice brown bubble spots. Before putting on the next one, add a new Tablespoon of oil to the pan, repeat until all are cooked.
