Last time I made this Italian dessert, but this time I changed up the flavors using seasonal fruits. This is an elegant and delicious dessert for any party, and it's cool and refreshing. It's also a great addition to any celebration.

Measure 3 tablespoons (40 grams) of sugar and add to the half-and-half in a saucepan. Heat gently until warm. In a small bowl, dissolve 1 tablespoon (10 grams) of gelatin in a little water, then stir it into the warm half-and-half until the mixture thickens slightly. Pour a portion into small cups, tilting them so the mixture sets at an angle. Let chill until set.

For the orange layer, heat the orange juice with 3 tablespoons (40 grams) of sugar until warm. Dissolve 1 tablespoon (10 grams) of gelatin in a little water, then stir into the juice. Tilt the cups in the opposite direction and pour in the orange mixture. Repeat the process for the strawberry layer, using 1 1/2 tablespoons (20 grams) of sugar and 1 tablespoon (10 grams) of gelatin, and pour this layer straight into the cups. Let each layer set before adding the next. Once set, decorate the tops as desired.

You can use gelatin with different flavors like chocolate sauce, passion fruit, or pomegranate to decorate and make your dessert table look beautiful and fun.
